Ingredients
2 medium sweet potatoes, peeled and cubed
2 tbsp neutral oil
Salt and pepper
1/2 tsp cinnamon (optional)
500g ground beef (lean preferred)
2 tbsp taco seasoning
1 tbsp tomato paste
2 cups cottage cheese
2 avocados, cubed or sliced
4 tbsp hot honey, or to taste
Method
Roast the sweet potato. Preheat oven to 200°C. Toss the cubed sweet potato in oil, season generously with salt and pepper, and add cinnamon if using. Spread onto a roasting tray and roast for 20 to 25 minutes until the edges are crispy and the inside is soft.
Cook the beef. While the sweet potato roasts, heat a pan over medium-high heat. Add the ground beef and break it up as it cooks. Once browned, add the taco seasoning and tomato paste and stir through. Cook for another 2 minutes. Season to taste.
Slice the avocado.
Build the bowls. Divide sweet potato between 4 bowls. Add beef, a generous scoop of cottage cheese, and avocado.
Finish with hot honey. Drizzle over each bowl generously. Serve immediately.
