Cate’s Hot Tip: Many of the Tik Tok videos show the recipe using a whole block of feta, but I opt for half a block. Still creamy and delicious, but the full block can be quite rich and salty. 

 

Ingredients: 

  • 1 salmon fillet 

  • 1 cup feta cheese 

  • 1 ½ cups cherry tomatoes or more if you love them! 

  • 1 teaspoon salt or to taste 

  • ½ teaspoon fresh black pepper 

  • 1 teaspoon garlic powder 

  • 1 teaspoon smoked paprika 

  • 1 tablespoon olive oil 

  • Salt and pepper, to taste 

  • Fresh herbs (such as parsley or basil), for garnish (optional) 

  • 250 g penne pasta cooked al dente 

Method: 

  1. Preheat Oven: Set your oven to 200°C (180°C fan-forced). 

  1. Prepare Baking Dish: In a small greased baking dish, place the salmon fillet, cherry tomatoes, and crumbled feta. Drizzle with olive oil and season with salt and pepper. 

  1. Bake: Bake for 15–20 minutes, or until the salmon flakes easily and the tomatoes are soft and juicy. 

  1. Cook Pasta: While the salmon is baking, cook the pasta according to package directions. Drain and set aside. 

  1. Mix It All Together: Remove the baking dish from the oven and use a fork to flake the salmon. Mash the feta and tomatoes to create a creamy sauce, add the spices then stir in the cooked pasta until everything is well coated. 

  1. Serve: Top with fresh herbs if desired and dig in—straight from the dish for less cleanup! 

This one-pan dish is protein-packed, comforting, and takes the stress out of midweek dinners—especially when you’re away from home.
