Cate’s Hot Tip: When grinding the pepper, be gentle! And if a bit extra goes in, you can call this a One Pan Lemon Pepper Chicken – still a crowd pleaser. 


Ingredients: 

  • ½ cup olive oil 
  • 1 tbsp dried oregano 

  • 1 tbsp freshly minced garlic 

  • Juice of 2 lemons (about ¼ cup) and zest of 1 lemon 

  • 1 tbsp sweet paprika 

  • 1 tsp Dijon mustard 

  • 1 tsp sugar 

  • 1½ tsp sea salt flakes 

  • ½ tsp black pepper 

  • 1.2 kg chicken thigh cutlets (bone-in, skin-on; approx. 5–6 pieces) 

  • 6 medium potatoes, cut into wedges 

  • ½ cup chicken stock 

  • 1 lemon, sliced (optional) 

  • 1 tbsp fresh oregano or parsley, for garnish 

  • Steamed greens or a green salad, to serve

Method: 

  1. Preheat Oven: Set your oven to 200°C (180°C fan-forced). 

  1. Prepare Marinade: In a large bowl, whisk together the olive oil, dried oregano, garlic, lemon juice and zest, paprika, mustard, sugar, salt, and pepper. 

  1. Marinate Chicken: Add the chicken and coat thoroughly. Let it sit for a few minutes to soak in the flavours. 

  1. Assemble in Pan: Spread potato wedges in a large baking dish or roasting pan. Place the chicken on top and pour over remaining marinade. Add chicken stock and lemon slices if using. 

  1. Bake: Bake for 45–50 minutes or until the chicken is cooked through and the potatoes are tender and golden. 

  1. Serve: Garnish with herbs and serve with greens or a side salad. 

This one-pan wonder is perfect for a relaxing night in, and ideal for guests who want something simple yet satisfying. Try it next time you stay at Quest!
