Episode 4: Avocado on toast with Cate’s never fail soft-boiled egg

Being able to cook breakfast in the morning is a huge part of that. Here’s my go-to breakfast, and I’m going to share with you my fail-safe trick for a perfect soft-boiled egg every time.”

At Quest Apartment Hotels, our fully equipped kitchens make it easy to prepare fresh, wholesome meals during your stay. This Avocado Toast with Soft-Boiled Egg is a perfect example—simple, satisfying, and packed with nutrients to kickstart your day. 

Cate’s Hot Tip: Gently drop egg into rapid boiling water for 5 1/2 mins then out into tap water to cool down enough to peel and enjoy!

Ingredients: 

  • 1 ripe avocado 

  • 2 slices of whole-grain or sourdough bread 

  • 2 large eggs 

  • 1 tablespoon olive oil (optional) 

  • Salt and freshly ground black pepper, to taste 

Optional toppings: chili flakes, microgreens, sesame seeds, or a squeeze of lemon juice 

Method: 

  1. Cook the Eggs: 

  • Bring a small pot of water to a boil. 

  • Carefully lower the eggs into the boiling water using a spoon. 

  • Boil for 6–7 minutes for soft-boiled eggs with runny yolks. 

  • Once cooked, transfer the eggs to a bowl of ice water to stop the cooking process. 

  • Peel the eggs and set aside. 

  1. Toast the Bread: 

  • While the eggs are cooling, toast the bread slices until golden and crispy. 

  1. Prepare the Avocado: 

  • Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. 

  • Mash the avocado with a fork, adding salt and pepper to taste. 

  • For extra flavor, you can add a squeeze of lemon juice or a drizzle of olive oil. 

  1. Assemble the Toast: 

  • Spread the mashed avocado evenly over the toasted bread slices. 

  • Slice the soft-boiled eggs and place them on top of the avocado toast. 

  1. Add Toppings: 

  • Sprinkle with chili flakes, microgreens, sesame seeds, or any other toppings you prefer. 

  1. Serve: 

  • Serve immediately and enjoy a delicious, nutrient-packed breakfast.
