Episode 4: Avocado on toast with Cate’s never fail soft-boiled egg

Cate’s Hot Tip: Gently drop egg into rapid boiling water for 5 1/2 mins then out into tap water to cool down enough to peel and enjoy!
Ingredients:
1 ripe avocado
2 slices of whole-grain or sourdough bread
2 large eggs
1 tablespoon olive oil (optional)
Salt and freshly ground black pepper, to taste
Optional toppings: chili flakes, microgreens, sesame seeds, or a squeeze of lemon juice
Method:
Cook the Eggs:
Bring a small pot of water to a boil.
Carefully lower the eggs into the boiling water using a spoon.
Boil for 6–7 minutes for soft-boiled eggs with runny yolks.
Once cooked, transfer the eggs to a bowl of ice water to stop the cooking process.
Peel the eggs and set aside.
Toast the Bread:
While the eggs are cooling, toast the bread slices until golden and crispy.
Prepare the Avocado:
Cut the avocado in half, remove the pit, and scoop the flesh into a bowl.
Mash the avocado with a fork, adding salt and pepper to taste.
For extra flavor, you can add a squeeze of lemon juice or a drizzle of olive oil.
Assemble the Toast:
Spread the mashed avocado evenly over the toasted bread slices.
Slice the soft-boiled eggs and place them on top of the avocado toast.
Add Toppings:
Sprinkle with chili flakes, microgreens, sesame seeds, or any other toppings you prefer.
Serve:
Serve immediately and enjoy a delicious, nutrient-packed breakfast.
